Mangoes are one of my favourite fruits and they are at their peak right now. Summer means mangoes and even their look resembles that of the sun.

Australian mango varieties include Kensington Pride (also known as Bowen), Calypso, R2E2, Honey Gold, Parvin and Keitt. I like them all but if I was forced to pick a favourite it would be the Kensington Pride. Honey Gold are the sweetest and R2E (takes its name from the row and position in the field of the first tree that was grown in 1991) are the easiest to cut and are good in the blender as they are the least fibrous.

Unfortunately, mangoes don’t grow that well on Tamborine Mountain because it is too cool for the trees to set fruit and therefore, we must rely on friends in the lowlands for our supply.

How to tell if a mango is ripe? It’s not always about colour. Squeeze it very gently – a ripe mango will ‘give’ slightly just like an avocado and have a fruity aroma at the stem end.
