You can also use them as a wonderfully easy way to begin a dinner party with friends.
This dish first made an appearance on the spring menu at Eden in our first year of opening and they were so popular that they became a regular feature. I once foolishly toyed with the idea of changing the filling from pork to Mooloolaba king prawn and Fraser Island crab. So, did some up as a special and asked the regulars for feedback – “these are nice, but we prefer the pork ones” came the reply time and time again.
So I left them as they were – that’s the challenging thing about owning a restaurant as a chef; you want to change up the menu from season to season, but you also have to listen to your customers and give them what they want, if you want to keep them smiling and coming back that is.
