Temperature affects every aspect of wine, from the grape right through to the glass.

The climate where the grapes are grown affects their sugar levels and flavours which in turn impacts the finished wine. Generally, wines from cooler climate regions will be more subtle in flavour, lower in alcohol with crisp acidity, lighter body and bright fruit flavours. Grapes grown in warm climate regions tend to produce bigger, bolder and fuller-bodied wines with higher alcohol and softer acidity.

During the winemaking process temperature determines fermentation speed and this has a huge influence on final wine characteristics. Ferments at colder temperatures take longer than ferments at warmer temperatures and winemakers use both wine heating and cooling equipment to control ferments to produce the exact styles of wine they like.
